These deliciously sweet and savoury quinoa bites are a taste of fall. The ingredients include vegetables of the season that are not only so good for you but combined taste great. The perfect healthy snack recipe!

I’ve been talking a lot lately about living a healthier lifestyle. Spending more time on myself and making sure that my body, mind and soul are feeling refreshed and refuelled.

Considering what foods I am eating and reflecting on how they make me feel afterwards has been a focus of mine for the last 8 weeks. I started my workout journey, had my eyes recently examinded and set some goals to better self care.

It’s pretty cool how the things we eat can change and enhance different parts of our bodies. Like our eyes for example, there are so many foods that can strengthen our eyes and it’s so important to consider cooking with these foods to make sure we are absorbing those nutrients.

Sweet & Savoury Quinoa Bites Recipe

“Full of nutritious autumn ingredients like apples and butternut squash, these quinoa bites are delicious. If you feel like sharing with your family, they are perfect for introducing your little one to finger foods. They hold together well in your hands and fall apart easily in your mouth.”  –Love Child Organics

Ingredients 

  • 1 1/2 cups of cooked quinoa
  • 1 cup grated butternut squash
  • 1 medium sized apple, peeled and grated
  • 1/4 small onion, minced
  • 2/3 cup grated cheddar cheese
  • 2 tablespoons raisins or cranberries (optional)
  • 1/2 teaspoon dried powdered sage (optional)
  • 1 egg

Directions

Step One: Preheat oven to 400 degrees and line baking sheet with parchment paper

Step Two: Grate apple, once finished bring it all together and squeeze out the juice. (Squeeze it into a drinking cup, put it in the fridge and you have fresh squeezed juice for later too!)

Step Three: Mix together drained apple and all other ingredients. Mix until fully combined.

Step Four: Create 1 inch round balls and place an inch apart on the baking sheet.

Step Five: Bake in the oven until the sides start to darken. About 15 minutes.

These quinoa bites will last for several days in the fridge and are best served at room temperature or slightly warm. Enjoy your new healthy snack recipe for breakfast or any time of day!

  • The other week @lovinglittlesblog and I were invited to participate in a black box cooking competition put on by @whitespot_restaurants and @eatdrinkbuybc in support of a charity of our choice. We competed against 8 other teams and created a pecan crusted chicken stuffed with goat cheese and fresh local blueberries. You guys.... it was GOOOOOD! But, there were lots of amazing dishes created that afternoon and even though we didn't win we were still able to donate $200 to the charity of our choice, @bcwomens.

Fun fact: White Spot and Triple O's serve more than 49,000 pounds of fresh blueberries in their menu items, all from local farmers across BC. That's a lot of blueberries and a lot of local love! Starting today blueberries have returned to all White Spot and Triple O's locations but are only available for a limited time while Mother Nature allows. We got to try their fresh BC blueberry milkshake and fresh BC blueberry pie this afternoon, still drooling.
